The international gastronomic industry worldwide has generated a diversity of offers based on the most outstanding national cultures that over time have become global as Italian and French food. Although in Latin America the French culture is highly appreciated the idea of the mobile bistro is underdeveloped. In Colombia, the gastronomic tradition is centered in the local restaurants, the caterers and the positions of fast street food of very informal character. It is for this reason that the BISTRÓ MOVIL TYPE FRANCES is a new offer for the Bogotanos who recognize French food, especially their wines and cheeses as high quality can taste in institutional, academic, social and cultural events. The market is in a development process with many growth opportunities, to create restaurants with new proposals, quality levels and new experiences in foods to combine cultures and why not generate jobs. This raises the question that mobilizes this research and gives life to this commercial project. This bistro has high possibility of functioning in events of academic, social and cultural type. Likewise, it can be concluded that it is a viable enterprise since it generates not only labor supply for two people, but also profits of almost 20 million pesos a year.
