Change and advances have meant one of the biggest challenges for companies to face; Each of the organizations has the objective of achieving and ensuring the greatest possible reliability in their production chains for their future. For this, the best way to do it is to acquire importance in the security of said chains, through the identification of errors. In the context of the above, management, risk management is a fundamental column, since the identification of these risks becomes the foundation for management. The purpose of the following section is to review those dangers that occur in the production chains; For this, a design of procedures has been carried out that works under the approaches of the 5*5 technique, this technique or approach is the 5-step process, where each one contains 5 elements, which allow through five actions where: diagnoses, represents, determines and classifies the risks that exist in a supply chain. For this occasion, this procedure is applied in a sugar production, confectionery and chocolate supply chain; Starting with the main objectives 1) the causes of the context are analyzed, 2) process design and development of sugar, confectionery and chocolate production, 3) supplied diagram elements, input, process, output, customer are specified; 4) the relevant failures are found through the procedure applying the method of the five whys and finally; 5) They are organized according to the security management system and the logistic movements. This will allow the supply chain of sugar, confectionery and chocolate production to create solid foundations to effectively take care of safety by identifying risks and thus anticipating improvements.
