Introduction: In recent years the poultry sector has grown continuously worldwide, this related to being one of the animal protein options of lower cost in the market, so they have created strategies that give animal welfare, with the In order to give a quality of life to birds, also minimize stress to provide a double advantage, since it increases the productibility and facilitates its management, reducing the possibility of blows, falls, injuries, pre-mortem deaths, among others. Thus the quality of the final product is maintained. Objective: Establish in a manual the procedures that guarantee animal welfare during the process of benefiting of birds, from a plant in Piedecuesta, Santander. Methodology: This corporate and solidarity social practice was executed in a beneficiation plant located in the municipality of Piedecuesta, this lasted six months, where all the activities assigned to the main veterinarian was constantly accompanied and constantly supervised, likewise the creation of the manual in 3 phases, observation, identification of shortcomings and corrective actions was carried out. Results: With the knowledge acquired and after the collection of data, an animal welfare manual was developed where it is shown clearly and concisely, the steps that must be taken into account to generate animal welfare in the process of benefit of the birds. Conclusions: Animal welfare being must be present at each stage of the animal's life both for legal reasons and ethical reasons, since it was found that animals feel, according to this they should be given a quality of life, which brings with it, good health and better conversion indices, generating greater profitability for the company. Therefore, the training of personnel that manipulates the birds where constant accompaniment to the workers to give instructions on the proper management of the animals throughout the process is essential.
