Antimicrobial agents are used in farm animals for prophylactic and therapeutic purposes, this practice generates traces of metabolites in meat that corresponds to the animal protein consumed by humans, indirectly causing a negative impact on health causing bacterial resistance with an endless number of diseases, cataloged as a relevant problem worldwide, creating the need for studies that highlight the importance of antibiotic use during the animal production stage. In this article, a systematic review was carried out based on the PRISMA (Preferred Reporting Items for Systematic Reviews and Meta-Analyses) model, on antibiotic residues in meat for consumption, establishing a search method in databases such as: SciElo, ScienceDirect, Google Scholar, Scientific Journals, Redalyc, ProQuest and Springer Link, using keywords combined with connector Booleans "AND" and "IN, in addition to their Portuguese and Spanish equivalents. considering selection, exclusion and inclusion criteria, filtered in year of publication, topic and language. The final selection of the literature review includes 73 articles from which it was possible to infer that, at a global level, food health and safety is an important pillar for the quality of pampering, taking into account that products of animal origin, such as meat derivatives, comprise a high percentage of consumption in human food. Finally, the residues of these medicines in meat destined for consumption represent a problem in the livestock sector, environmental, generating risk to public health.
