The book "Sumapaz: Knowledge and flavors" represents an excellent opportunity to consolidate and show a rigorous investigative process, rooted in the culture of culinary traditions of the bearers of ancestral knowledge in the 9 municipalities of the province of Sumapaz, which do part of the area of influence of the Agroecological and Business Center of SENA Fusagasugá, Cundinamarca Regional. This work shows in a clear and entertaining way, the culinary experiences that, with historical tradition, have permeated this region and have allowed the generation of cultural identity.
