The book is part of the results of the innovation project called "Development of edible films and coating for food applications from agroindustrial waste as an alternative for the development of new packaging", in which the following are presented: the commercial surveillance of the productive chain of the cholupa oriented to the development of new packaging, construction of a prototype or to elaborate edible films from agroindustrial waste and three laboratory practice guides where the main procedures and calculations to be carried out in the practices for obtaining flours, pectins and biopolymers of the cholupa.
