Introduction: The poultry industry is one of the most developed in Colombia. The average consumption of chicken per capita in the country is 12 kg of chicken/year, exceeding the word average (7.6Kg/año). However the demand could be increase to 19.6 kg/ inhabitant, this Implies an increase in the activity of industrial exploitation and therefore the growth of products derived from this production. In order to find a new use for the byproducts of this industry, and in order to meet their potential applications in various food industries, collagen was extracted from chicken legs.
