The experim en t is proposed to explore food technology alternatives that can have possibilities of utilization in small farmer zones, using an unprofitable local resource in Andean Colombian Zone (cepa of Arracada xanthorrhiza B. Stalk), the earthworms, at discretion feeding system, under intermediate technologies. 108 Arbor Acres chickens were submitted to six treatments,three replications each one and six animals by repetition in an experimental design at random completely for comparing two diets often used by small producers of rural zones (commercial concentrate and commercial concentrate mixed with yellow corn) with four alternatives that were using Arracac ia stalk in different ways (crude, cooked, 10 o/o of leaves) complemented by proteins,suplement of high quality with vitamins and minerals and earthworms; nutritional sources given them separate - ly at will in order to stimulate poultry self-balancing. Although the weights obtained with diets using Arracacia stalk, they were inferior to those of commercial concentrate, they exceeded the weights of diet two and improved the net income.
