This research addresses the problem of sanitary conditions that affect the safety of coastal meats and cheese that are produced, distributed and commercialized in the department of Atlantico. The population under study was made up of coastal cheese and meat merchants who enter the department of Atlantico through Barranquilla, Puerto de Sabanagrande, Puerto de Ponedera, Puerto de Bohorquez, El Fogon, El Peligro, Puerto de Suan, via Cordialidad ( Sabanalarga), Luruaco, Puerto Colombia toll and another entry site (Soledad). In the methodological process, the allocation of the information collection routes is carried out, based on the information obtained from the marketers of the coastal meats and cheese in the main ports of the Atlantic department, the merchants surveyed the randomly selected personnel, subject to the number of units obtained in the sampling process. In the analysis of the information used the multivariate statistical methods, the ACM multiple correspondence analysis. In general terms, the results indicated that the vast majority of the coastal meat and cheese stalls do not meet the minimum hygienic-sanitary requirements, do not have infrastructure, do not have equipment for the conservation of these foods that require conditions special refrigeration and / or freezing. Training in good manufacturing practices is necessary for all people involved in food handling, so that they can guarantee the safety and quality of food to protect the health and well-being of the Atlantic population.
