Economic globalization has forced the coffee agro-industrial sector to become more efficient and innovative. The sintering of the sustainable variables derived from the MESMIS method allows the evaluation of sustainability as recommended by several authors. Due to the complexity of the subject matter, the contribution of different disciplines, experts in the coffee industry and in the productive chains of sustainable companies is important. For this purpose, a study was carried out in coffee environments using statistical, economic and decision-making tools, such as the DELPHI methods and the Analytic Hierarchy Process (AHP). As a complement to the previous methodologies, the analysis of the equilibrium point, the analysis of principal components and the method of contour surfaces were applied with the selected variables to propose a statistical model of linear regression to estimate the sustainability, profitability and agricultural production of a coffee plantation considering 10 variables of sustainability correlated among them.
