Percepción de los usuario de un restaurante de menú diario en Bogotá D.C. frente a una estrategia de educación alimentaria y nutricional en Calorie Labelling y el consumo de menús ofertados
To identify the perception of the users of a restaurant of a daily menu in Bogota, related to a food and nutritional education (EAN) strategy in Calorie Labeling on the consumption of the menu preparations offered. Materials and methods: The present study is mixed, descriptive cross-sectional with a convenience sampling; is a pilot study on calorie labeling (CL) in Colombia. For the development of this, four stages were carried out: I) socio-demographic characterization of restaurant customers, II) direct weighing of 20 dishes offered by the restaurant in duplicate for 5 days III) Implementation of a food and nutrition education strategy and design of educational material using the CL in the restaurant IV) qualitative analysis of the perception (whose categories were: utility, reliability and comprehension) of CL on the consumption of the preparations through a survey; Through the previous categories, variables such as motivation and habits emerged, which accounted for the categories of perception. Results: To evaluate the perception, the categories were taken into account: utility, reliability and comprehension, showing that the perception of the strategy implemented in the restaurant was understandable for 76% of consumers, reliable 24% and used 11% of consumers. Conclusions: The perception of consumers against the strategy of EAN in CL showed that there are factors that affect the choice of food, given that it must take into account the context, habits, motivations and knowledge related to healthy eating. Participants perceive that the strategy may be useful but it requires an intervention of greater time and conceptual depth to evidence behavioral changes.
