A test was carried out to measure quality indicators of the anaerobic fermentation processes of organicmaterials. The monitored indicators were: acidity (pH); temperature; dry matter and microbial biomass.This last is estimated by microbial activity analysis (respirometry); the counting of CFU of bacteria,actinomycetes and fungi was carried out by the method of dilution in plates and culture media. Thebromatological analyzes were carried out in the ecophisiology lab of the University of Tolima.
