The company Frigorifico Vijagual S.A. is dedicated to the profit and disposting of bovines to obtain meat products of human consumption. The meat products are characterized by being highly exposed to the health risk, due to their pH, temperature, nutrients and water activity; What favors microbial proliferation, therefore, there must be effective controls against any deficiencies in the conditions of the different activities that are part of the productive process: processing, manipulation, conservation, transport and marketing. This research work evaluated microbiologically the bovine production line – benefit, disposting and storage – with the current regulations. To this end, it was initially recognized the process of bovine production line, taking and analysis of the 120 samples for each of the 5 microorganisms included in resolution 2690 of 2015 of the Ministry of Agriculture and Rural Development, Ministry Health and Social Protection for a Total of 600 results, of which 24% correspond to E. coli Generic, 3% to E. coli O157: H7 and 2% a Salmonella spp; For what was raised the beginning of the program of Reduction of Pathogens (PRP) to decrease the microbial load associated with bad practices of manufacture, errors and flaws in the programs of cleaning and disinfection (LYD) and the plan HACCP.
