The target of this research is to make a qualitative and quantitative description of three typical dishes (Frijoles bola roja, sancocho y blanquillos) and typical beverages as Claro (made with Corn) and chicha which are consumed by the peasant population of Montenegro, Quindio (Colombia). The origin of these dishes were described, as well as their nutritional value and its possible recommendations as a healthy dish, the latest, for each one of the dishes without taking away its essence. The study was descriptiveobservational. Books, web sites, Montenegro mayor's office and governing entities were consulted during the research about the origins of these dishes and the customs of the peasant population. A survey was implemented to 90 individuals at the settlements Calle Larga, El Gigante and Cantores, with the purpose to know about their customs and the different crops grown in the coffee area. Likewise, the preparation of the selected three dishes were made specifying gross weight, net weight, cooked weight and taking this a starting point to develop the a nutritional analysis per serving. The nutritional value of these dishes yielded that meals as Sancocho have a high level of carbs, likewise red beans although these also add a high level of fat, on the other hand the white beans , provide a high level of vegetable protein with a high biological value. It is concluded that the peasants from MontenegroQuindio continue to preserve their eating habits despite of factors as tourism, which could eventually modify their food behaviors
