Improving the keeping quality of Mangifera Indica L. cv vallenato was the objective of this research, important step to enhance the agrifood chain of this fruit, which were analyzed the influence of the method of modified atmospheres of respiratory rate of the fruit, packaging using low density polyethylene caliber 2 and 3 mils and three gas mixtures (3% O 2 - 3%CO 2 - 94% N 2 , 4% O 2 - 7% CO 2 - 89% N 2 , 5% O 2 - 5% CO 2 - 90% N 2 ). The modified atmosphere packaging delayed the climacteric maximum slowed metabolism of fruits and with greater intensity in treatment 5 which was constituted by a packing gauge 2 mils with the gas mixture of 5% O 2 - 5% CO 2 - 90% N 2 within which was preserved for a longer period the desirable characteristics of the fruit compared to the fruits witnesses.
