A characterization of the contents of some protease inhibitors, hydrocyanic acid and partial chemical composition of three wheat cultivars, Red, White and Spotted of Zaragoza bean (Phaseolus lunatus L.) from the municipality of Turbaco, Bolivar was realized. Also it was estimated the protein digestibility “in vitro”. The results showed some significant differences in protein content, crude fiber and ash.
