Area and line roughness were identified for arithmetic roughness (R a ) and root mean square roughness (Rms) parameters for the coffee berry epicarp at the green and mature stages of development. Also were determined the dimension and density of epicarp cells. The average roughness obtained were: R a of area of 0,13 μm and 0,32 μm, for mature and green fruits, respectively. Rms of area of 0,16 μm and 0,40 μm for mature and green fruits, respectively. Ra of line of 0,11 μm and 0,28 μm for mature and green fruits, respectively. Rms of line of 0,14 μm and 0,35 μm for mature and green fruits. Every development stage presented specific ranges without interpolated data. Ellipsoidal shape of cells was observed with average major and minor diameter of 21,35 μm and 11,37 μm, respectively, and average area of 194,62 μm2. Number of cells for each 3.600 μm2 was 15, therefore the cells density was 4.206 cells/mm 2 .
