The changes in Colombians lifestyle and the increasing consumption outside homes, have given more importance to developing the Food Service Industry in Colombia. These changes have generated a bigger supply of restaurants, and therefore, there is a need for a better performance and service from them. Being the regular restaurants of stratum 3 and 4, those who constitute the largest number of establishments in the sector, an analysis to know the current level of formalization in terms of variables such as financial and administrative manage, technology, marketing, operation and logistic human management, becomes relevant. Likewise, it is necessary to define an ideal profile for this kind of establishments in which practices and actions that allow to overcome formalization opportunities are recommended to close the distance between the current and the ideal situation, as well as to raise awareness in the sector about the need of support from secondary actors like academy, guild and suppliers to potentiate the development of such establishments and generate contribution to the country s economy.
