The review of literature identified changes at agricultural plowing techniques and potato (Solanum tuberosum) cultivation systems by groups of people. Those groups of people settled down in some sub-moorland and moorland cold regions in the Department of Boyaca during hundreds of years; at the Pre-Hispanic times, the arrival of the Spaniards, the Colony Period in the 19Th Century, and the 20Th and 21St Centuries. These farmers have taken advantage over the natural resources of the terrain, soil, temperature, and water; by organizing agricultural systems of production, and using techniques that require manual and intellectual skills. We identified that currently, the farmers of this tubercle have adapted technical instruments used since the predecessors of the Muisca culture, with the techniques introduced at the Spaniards arrival, and technologies included at the 21St Century.
