Abstract:

Introduction. The term unicellular protein (PUC in Spanish) is used to make referent to microorganisms such as bacteria, yeast, algae and filamentous fungi, which are used in human and animal food, especially due to their high levels of proteins and their property of growing on agro industrial waste. Objective. To measure the quantity of brute protein of Candida Utilis and Sacharomyces Cerevisiae obtained from hydrolyzed cane. Material and methods. The yeast, after 26 hours of growth in the hydrolizate cane, was measured under terms of its contain of proteins, fats, fibers and minerals and, by the Kendall Method, an analysis of brute protein was made in the biomass produced. Results. C. utilis and S.cerevisiae show a good profile of aminoacids, which are important in animal feeding. Conclusion. Protein concentrations from S. cerevisiae and C. utilis were produced to complement animal food by the biotechnological use of the waste generated by the industrial treatment of sugar cane.
