Tipificación de los vínculos producto típico-territorio: una metodología con aplicación empírica en productos agroalimentarios de la región andina de Colombia
Agri-food typical products are linked to a territory and are embedded to customs of the local population, both in production as in consumption; therefore these products possess differential quality attributes that are evaluated by consumption sectors. The main objective of this paper is to typify the specific relationships between typical product and territory. Taking into account relationship types proposed by Caldentey & Gomez (1996) we propose as typification criteria: i) the specificity of the resources and territorial actives involved in the production, and ii) the socio-economic and cultural importance in the territory; associating some indicators with this. An empiric application is done in three products from the Andean region in Colombia: Veleno guava paste, Paipa cheese and Tequendama mango. The information for typification was obtained from semi-directed interviews with key actors, and secondary information. Results obtained in cases empirical analyzes, show that proposal criteria and indicators associated to typology was consistent, being liable to be used for other cases.
