En los ultimos anos se ha evidenciado un panorama contradictorio para los quesos mexicanos genuinos, mientras algunos han logrado crecer en el mercado, otros presentan un proceso gradual de desaparicion. La situacion evidencia que aunque el panorama macroeconomico y la normatividad sean las mismas para todos los queseros, hay dinamicas territoriales que marcan la diferencia en su competitividad. Con la intension de identificar algunas causas que estan afectando su desarrollo y evolucionar hacia el diseno de estrategias que estimulen su rescate y valorizacion, se empleo el analisis de redes para comprender el fenomeno desde una vision territorial.AbstractIn recent years there has been a mixed picture for genuine Mexican cheeses, while some have managed to grow in the market, others present a gradual process of disappearance. The above reflects the fact that although the macroeconomic outlook and the regulations are the same for all the cheese, there are territorial dynamics are making a difference in their competitiveness. With the intention of identifying some causes that are affecting its development and evolve into the design of strategies that stimulate their rescue and recovery from a territorial perspective, in this research used network analysis.
