The objective was to analyse the factors that affect the volumetric contraction of varieties of industrial cassava, by analysing the same covariance matrices, under a linear multivariate model (Manova). Methodologically, a drying process was carried out of three varieties of industrial cassava (Corpoica Tai, Verónica and Gynes), varying the operating conditions of the process, in terms of temperature (45°C, 55°C and 70°C), drying speed (1 m/s, 3 m/s and 4 m/s) and time (from 0 min-480 min in 15 min intervals). For the analysis of data Manova was performed, where the response variables were a volumetric contraction, length and width of the cassava parallelepipeds. It is concluded that the joint effect of factors, such as the variety and speed of drying, acting together with the temperature on the evaluated response variables, since they were interactions that marked significant differences throughout the experiment, therefore, they directly affect the volumetric reduction of industrial cassava varieties.
