This is a qualitative study using tools of ethnography and specific polls with multimedia, elderly informants whom are part of the tradition of producing sugar cane and panela in trapiche at the Provincia del Gualiva, specifically at Villeta, Sasaima and Nocamia. The main goal is to recover the ways in which those people made food, deserts, dances, and many other things, everything in the focus of contribute to the reinforcement of the local folk and traditions in the students of the Centro de Desarrollo Agroindustrial y Empresarial. This project proposes the main goal of contribute at the constitution of identity trough the culinary legacy of the people involved in the production of sugar cane and panela.
