The preliminary results following article arises from a research project entitled Traditional cuisine of the province of Alto Magdalena. If municipalities and Agua de Dios Girardot in Cundinamarca-Colombia. By the group of professionals CTPDE Girardot SENA TOURISM HOSPITALITY GROUP and supported by the National Center for Hospitality of the Sena-Bogota. The aim of this study is to recover the traditional food culture of Alto Magdalena in the municipalities of Agua de Dios and Girardot, from the observation and interpretation of the reality of the actors with the purpose of developing, design and dissemination of booklets that allow rescue the ancestral knowledge about traditional food; additionally it aims to position this kind of gourmet food by proposing innovative and technological innovations such presentations (nanotechnology) for these dishes. The methodology used is an Action Research with a qualitative approach. As preliminary results have been able to do interviews, focus groups have been formed and have identified two traditional dishes of the municipalities under study which have undergone the sheet, standard recipe, and microbiological and physical chemical analysis to meet with GMP protocols.
