Because its nutritional components, raw milk can be considered a complete food; never the less, its liquid state and the given management, can become this product in an ideal substrate for the development of microorganisms and diseases transmission. The objective of this work was to determine some of the actors’ characteristics who are part of the raw milk chain at the municipality of Popayan, from which the fulfillment of the established technical recommendations by the current regulations for each chain link was checked. In order to perform this process, each of the milky chain actors in Popayan and surrounding municipalities was polled, and further analysis was made. Information from 2.305 actors was obtained, from which 2.014 were consumers (homes), 195 producers, 60 artisan processing (9 legally constituted enterprises and 51without commercial registration) and 36 were actors from the collection and distribution chain link (25 routers and 11 distributors). The technical standards related results obtained in each chain link allowed determining that 100% of the actors do not accomplish every technical recommendation, so that they are considered as informal actors.
