MANY studies have been made in developed countries of the quality of eggs being produced and marketed. Egg laying test reports give very precise data on each breed and variety of bird entered in the test. However, such data is lacking in developing countries and leads one to wonder about the actual quality of eggs being marketed. The objective here was to study exterior and interior quality characteristics of eggs being sold in Bogotá, Colombia. A random sample of eggs was purchased in public markets, food, poulty, and variety stores, and supermarkets. Each egg was weighed, compared with U.S.D.A. standards for exterior qualtiy, and candled to determine shell damage. The eggs were broken, the albumen height determined by the “Egg Quality Slide Rule,” and converted into Haugh units.
