The plantain Dominico Harton (Mussa AAB Simonds), is one the most spread varieties in the Department of Caldas (Colombia), therefore, in the stages of harvest and postharvest, big quantities of foliar residues, pseudostems, acorns, stem of the bunche (rachis), second and third quality fruit and fruit peels are generated, that lacking of treatment or proper disposition, turn into pollutants for the environment. This problematic, has been approached in this study, which in the first instance, effected a diagnosis, which results were recorded in an information system developed for the productive chain of the banana in the Department of Caldas. Later, an physicist - chemistry analysis carried out a characterization to the residues mentioned before, which allowed to propose alternatives of utilization, like: obtaining paper from the pseudostem, obtaining flour of the Rachis with food ends in products like cookies, washes, and a covered in breadcrumbs products, and obtaining starch from the second and third qualities of plantains in the green state.
